Food-a-licious Friday {68} Enchiladas, Chips & Salsa

It's FRIDAY!!!

Can I get a "Woot! Woot!"?! : )

I'm excited for this weekend because it's my husband's 30th birthday weekend! Lots of fun things planned for my man. I hope to get pictures up for you all to see. He's not a big fan of celebrating his own birthday, but I am so that's all that matters...heehee : )

Today I am sharing 3 recipes with you. Yes, that's right. THREE recipes.

I actually posted this waaaaaaay back when MFTM was a baby, before I even started the Food-a-licious Friday weekly series. If you have been a long-time MFTM follower, you may have seen this post. But it's a good one... I promise you'll love it!

Chicken & Cheese Enchiladas
You will need:

2 boneless, skinless chicken breasts
lime juice
1 small can of green chillis
2 small cans (or 1 lg. can) of your choice red enchilada sauce
shredded cheese (I use the fiesta blend)
2 chopped green onions
package of small tortillas (you can use flour or corn)

Preheat oven to 375 degrees. Lightly cook chicken breasts in oil, lime juice, green onions, 2 table spoons of green chilis, salt, pepper, and garlic powder. Just cook until the outside of chicken is white (it will cook the rest of the way in the oven). Cube or shred the chicken. Put a thin layer of enchilada sauce in the bottom of your casserole dish so that the enchiladas don't stick. Roll chicken and cheese into enchiladas until you run out of ingredients or room in your casserole dish, whichever comes first. Then pour enchilada sauce over the top. Sprinkle cheese on top. Bake in the oven for 30 minutes. We like our enchiladas a little well done, so I usually broil them on low for about 5 minutes...just until they are lightly browned.

Salsa
You will need:

1 white onion
5 Serrano peppers
2 large cans of diced tomatoes
cilantro
lime juice
salt
pepper
garlic
water

Chop onion, seranno peppers, and a little less than a handful of cilantro. *If you do not like spicy salsa, scoop out seranno pepper seeds and discard. If you do like spicy salsa, only include 1-2 full peppers...deseed the other 3-4.* Put all ingredients (excluding the cans of tomatoes) into a food processor or blender...process until puree. Strain water from 1 can of tomatoes and add to the puree. Add the 2nd can of tomatoes to puree (do not drain water from this can) and pulse mixture until the thickness desired. Add water throughout to thin. Add seasonings throughout. This is a "taste as you go" kind of recipe.

Chips

You will need:

corn tortillas
salt
deep fryer or large pot of HOT oil on stove

Cut tortillas into fours. Put into deep fryer until they float and are golden brown. Place on paper towels to soak up excess oil. Add salt.

Friendship Valentine Party

I hope you all had a wonderful Valentines Day!

We sure did! I planned a friendship party this year for my daughter and her little friends, and it was a hit! We had a breakfast menu, a craft, a game, decorated heart cookies, and passed out Valentines. It was a special day, focused on our love for our friends.

The decorations for the party were simple, inexpensive, and cute. I used these awesome printables I found at Tatertots & Jello, streamers I had left over from my daughter's 3rd birthday party, and the Valentines decor that was already up in the house. I found pink plates, cups, napkins, straws, and utensils at the dollar store along with a red table cloth. I also cute out hearts to hang from the dining room chandi.

The menu for the party was breakfast themed and thanks to Pinterest and my own imagination, I was able to give it a Valentine's Day twist.

-Blueberry and banana nut muffins with cute Valentines wrappers and toppers

-Heart shaped waffles with homemade vanilla syrup and strawberries

-Heart shaped cinnamon rolls with heart sprinkles

-Heart shaped turkey bacon

After our craft (not pictured), the kiddos decorated heart shaped sugar cookies. They used frosting, tons of sprinkles, and heart marshmallows. SO fun!

The kids had fun playing with each other in my daughter's playroom...they especially loved her instruments. We played "Pin the Arrow on the Heart" using straws, tape, a blind fold, and that cute "I ♥ You" printable. Everyone won (winks) and the prizes were glow in the dark bracelets! The kids enjoyed sharing Valentines with one another and we were actually able to get a group photo with almost everyone looking at the camera.

Here is my daughter's Valentine's loot... the top photo shows her Valentines from her friends and the bottom photo shows her gifts from mom and dad (I only spent $7 on all of that!).

Here we are, me and my girl, on Valentine's Day. Love her to the moon and back.

And after a long day of decorating, cooking, hosting, partying, and cleaning, I sat on the couch and put my feet up... for 20 minutes until I had to start dinner : )

The rest of the evening was spent together as a family. My husband and I made dinner together and then we all snuggled on the couch for popcorn and TV to wind down for the night. Low key and with my family... perfect way to spend my Valentine's night.

i HEART you {Homemade Valentines}

There were SO many awesome homemade Valentine ideas floating around cyberspace this year!

I had a hard time deciding exactly what I wanted to help my daughter make for her friends' Valentines this year because I have an entire Pinterest board full of great Valentines ideas!

So I thought about my daughter's interests which are music, dancing, art, and movies. When I saw this idea, I knew I found something that her little friends (ages 3-4) would ♥ and something that my almost 4 year old could help me make.

They were easy and fun to make with my daughter. She is so excited to pass them out to her friends tomorrow at our Friendship Valentine's Party.

It's the weekend! Any big plans?

I'm doing the norm... laundry, cleaning, playing with my girl, trying a new recipe, crafting...

I wanted to pop in real quick today to share one last Valentine printable with you. This one was made for my husband and was inspired by our wedding song. I originally designed this print so that I could give it to him as his Valentine, but then I thought about how cute it would look in a frame next to one of our wedding photos.

Food-a-licious Friday {67} Semi-Homemade Stromboli

Happy Friday!!!

I am here to share a yummy semi-homemade recipe with you today. I LOVE semi-homemade things. My husband is not the biggest fan of semi-homemade recipes...but he usually enjoys what I make. This recipe is great for a busy week night, to put out for a party, or even as an appetizer. I make this as a dinner and pair it with a yummy salad.

This recipe will feed 3-4 people (if you have side dishes along side).

{Ingredients:}

Premade pizza dough

Shredded mozzarella cheese (1-2 cups depending on how cheesy you like it)

Salami

Pepperoni

Ham

Italian seasoning

Graded parmesan cheese

*Marinara or tomato sauce for dipping.

{Instructions:}

1. Preheat oven according to dough package and spray pizza pan with cooking spray.

2. Stretch out your dough on your pan. Season the dough with Italian seasoning and sprinkle mozzarella cheese on top.

3. Start layering your meats and add more mozzarella cheese on top.

4. Gently roll your stromboli up.

5. Sprinkle parmesan cheese and Italian seasoning on top.

6. Cook according to dough instructions. Cover the stromboli with foil for the first half of cook time. So I cooked mine for 7 minutes with foil on and 8 minutes with foil off.

7. Remove from oven and let cool for 5 minutes.

8. Slice and serve with warmed marinara sauce and a salad!

SO SO good. Even the hubs and wee-one liked it!

Simple & Frugal Valentine Decorating

Hello friends! Today I am going to share my Valentine decorations with you.

This isn't a holiday I go crazy on like Christmas or Halloween, but I still like to decorate a bit. I think it makes the holidays more magical and fun for my daughter and let's face it...I'll use any excuse to decorate with pinks and reds : ) I also didn't spend a lot of money on my decorations. Most things I just embellished with things I had on hand or I found things at the dollar store and in the dollar sections of JoAnn and Target.

So I figured I would share photos of my decorations and give you tips for embellishing and saving money along they way, sound good?

This shelf is in our living room right above our TV. I added the Glittery Doily Heart Banner I made a a few more embellishments...let's take a closer look.

Pretty simple, right? I used pink yarn and glittery foam hearts to embellish the shelf as well.

Let's take a look at the table in my entry way...

Let me break it down for you starting from the upper left box moving clockwise...

I decorated the box selves with more glittery foam hearts, $1 frames that I sprayed with chalkboard paint, and a painted & embellished wooden birdhouse (also $1).

You can find the tutorial on how I make my {Pot of Hearts} here. I used dollar store materials.

The wooden heart wreath was found in Target's dollar spot ($2.50). I embellished the wooden "love" word with glittery wooden hearts ($1) and stuck it in a large white clothes pin ($1). The red magnetic frame was purchased at Walmart for $5 and I embellished it with pictures of my daughter, magnets, and a Glittery Doily Heart.

The glass apothecary jars were made using dollar store vases and candlestick holders. I wrapped pink yarn around the apothecary jars to secure the Glittery Doily Hearts and skeleton keys. Then I filled the jars with foam hearts.

I spray painted a $3 wooden frame from Walmart red and placed one of my favorite photos of me and the hubs inside.

Polka Dotty Heart T-shirt {tutorial}

Hey there!

Yesterday I shared the tutorial for the {Polka Dotty Heart Headband} and I am excited to share the matching t-shirt tutorial with you today! It's an easy way to embellish a plan t-shirt and no sewing machine is necessary!

{Supplies:}

t-shirt

Heat-n-Bond lite

fabric

scissors

heart template

pencil

embroidery floss and needle

iron

towel

{Steps:}
1. Follow the directions on the Heat-n-Bond lite package. It will tell you how to prepare your fabric on the heat-n-bond. (I ♥ this stuff!)

2. Once your fabric is secured to the heat-n-bond, trace your heart template and cut out. Place the heart on the t-shirt and iron on.

3. Using your embroidery floss and needle, hand stitch around the fabric heart, being sure to knot both ends of the embroidery thread.

4. Wear it with the matching headband!!

I had all of the supplies on hand for this project except the t-shirt (which I found on clearance at Target).

So the total cost for the {Polka Dotty Heart Headband and T-shirt} was $1.50. Not too shabby if I do say so myself. And I used up some of the supplies in my stash! Double whammy! : )

Polka Dotty Heart Headband {tutorial}

This year I decided to make my daughter a cute headband and shirt to wear for Valentine's Day. I already had everything I needed in my craft stash to make the headband.

{Supplies:}

headband

strip of scrap fabric

felt

heart template

scissors

embroidery floss and needle

hot glue and gun

{Steps:}

1. Wrap the ends of the headband with scraps of fabric and secure with hot glue.

2. Wrap the strip of fabric around the headband, using the hot glue to secure both ends.

3. Trace and cut out 2 felt hearts.

4. Hand stitch around one felt heart with the embroidery floss.

5. Glue the embroidered felt heart to the headband.

6. Secure the 2nd felt heart with hot glue behind the embroidered felt heart.

7. Put in your hair and show it off!

It's as easy and as cute as that!

What I Know About Teaching

Hi there friends! Thanks for stopping by the ol' bliggity-blog today.
About a week ago I visited over at my sweet friend's blog, Southern Lovely. Lindsay has a fun series called "What I know..." where other bloggers share a little bit about something they know. In case you missed it over at her place, I thought I'd share a little bit of what I know with you, my lovely readers.

A little background knowledge about me...
I have my BA in Early Childhood Education and Elementary Education. Since I was in Kindergarten, I knew I was going to be a teacher. I ♥ school and I ♥ to learn new things. I had such great experiences in school which fed my dream of becoming a teacher.
I taught 1st grade for two years and 3rd grade for 3 years...a fulfilling and fun 5 years of teaching. This past year I took a leave from teaching to become a stay-at-home-momma, which I totally LOVE...but I yearn to teach. So my daughter reaps the benefits : ) Which brings me to this...

In my opinion, you do not HAVE to have a teaching degree or certificate to create teachable moments with your child(ren). Learning is all about experiencing and experimenting! Allow your child(ren) to ask questions, and if you don't know the answer...discover it together! It may get a little messy... but that's part of the fun!

{ Colorful Rice Sensory Bin }

I love thee {Shakespeare printable}

When I think about lovely words, I tend to think of Shakespeare.
In high school, most kids moaned in agony when they heard we would be reading Shakespeare in class. Not me. I was giddy with excitement. During my freshman year of high school, my sweet boyfriend (now husband) found 2 volumes of Shakespeare's works at an antique bookstore and he bought them for me for Christmas that year. I still have them and they are still one of my most prized possessions.

During Halloween, I used Shakespeare's words to create a spooky printable, and now for Valentine's Day I have created a printable that speaks of love...

Beautiful, isn't it? Gotta love a man who has a way with words : )

So as you are getting ready for the holiday of LOVE, go ahead and print one of these babies off and stick it in a frame next to photos of who and what you love. This printable is wonderful because you could leave it up all year if you wanted.

Glittery Doily Heart Banner {tutorial}

Ahhhh...the weekend.

Don't you just LOVE the weekend? Time with family. Time to sleep a little longer. Time to recoup from a long week. Time to craft... You know what I'm talking about. I'd MUCH rather be crafting than cleaning or doing laundry. So I thought I'd show you a quick, easy, and cheap craft you can do this weekend while you are waiting to switch loads of laundry ; )

{Supplies}

Pack of heart paper doilies (Target dollar spot)

Pack of glittery paper hearts (Walmart for $0.97)

Yarn (had on hand)

Glue (had on hand)

Scissors

Tape

Only 3 steps in the tutorial...are you ready... pay close attention because you don't want to miss anything...

{sense the sarcasm?}

{Tutorial}

1. Glue a glittery heart in the center of the paper heart doilies and let dry.

2. Arrange your doilies in the pattern you want them and carefully lace the yarn through the little holes at the top of each heart doily.

3. Cut the end of yarn and hang on your mantel with a couple pieces of tape.

♥ DONE! ♥

Quick and easy and CUTE.

Food-a-licious Friday {65} Crockpot Broccoli Cheddar Soup

Happy Friday!!

So glad you could come by today. I have such an easy and yummy crockpot soup to share with you today!

I've said it a billion times and I'll say it again...

I ♥ my crockpot!

This recipe is great for a chilly day or when you are feeling under the weather.

It's the perfect meal to make during a crazy busy week or throw all of the ingredients in the pot before church and dinner is ready later that night with NO fuss!

It's the little things, people.

{Ingredients}

2-3 pounds of broccoli florets

1/2 cup of chopped carrots

3-4 cups of chicken stock or vegetable stock
2 tbsp butter (I use I Can't Believe It's Not Butter)

3 cups of shredded sharp cheddar cheese (I use 2%)

1/2 tsp minced garlic

1/2 cup of half and half (I use reduced fat)

1/4 cup of minced onion (I substitute for onion powder b/c the hubs is allergic)

salt & pepper to taste

flour to thicken (optional)

{Directions}

1. Spray the inside of your crockpot with olive oil spray and set to low if you want to cook it for 6 hours and high if you want it done in 4 hours.

2. Roughly chop the broccoli florets and carrots, mince the onions, and put them into the pot.

3. Add 2-3 cups of chicken or veggie stock (just enough so that the veggies are barely covered in liquid...not swimming in it) and butter.

4. Add the garlic, salt, and pepper and allow to cook.

5. About 45 minutes before the soup is done, add the cheese and half & half to the pot and stir well and allow to melt.

6. After the cheese has melted, I stick my immersion blender down inside the pot to smooth out my soup. I do NOT like chunky broccoli cheddar soup. You can leave it as chunky as you like. If you don't have an immersion blender, you can use a regular blender or the magic bullet to smooth out your soup.

7. At this point I start adding flour gradually to the pot and whisking it into the soup to thicken it a bit.

8. Let the soup finish cooking for the remaining time (about 15 min.) with the lid off and serve with bread!

I love dipping my bread into the last little bit of soup in my bowl.
YUM!

Heart Argyle Valentine's Wreath {tutorial}

Hello there!!

Did you L.O.V.E. the week of giveaways?! Me too. If you haven't entered yet, you still have time!

Today I am going to share the cutest "pinspired" Valentine's wreath I made last week with my cute friend, Michelle from Modern Martha Michelle. Here is the PIN that inspired this project. I tried tracking down the direct link for this wreath on etsy to give the creator credit, but had no luck. If you happen to know the shop or creator of the original, let me know in the comments so I can give credit where credit is due : )

Anyway, back to the tutorial for this wreath...

Adorbs, right?!

{Supplies}

wreath form

yarn

felt (2 colors)

heart template

marker or fabric pen

scissors

hot glue & gun

{Tutorial}

1. Wrap your wreath with yarn and tie end of yarn in a knot or secure the end with hot glue.

2. Trace your heart template on the felt and cut the hearts out. (I used 16 hearts or 8 of each color.)

3. Hot glue the hearts around the front of the wreath, in an upside down/right-side up pattern.

4. Hot glue the end of a new piece of yarn to the back of the wreath and wrap around the wreath, crossing over each of the felt hearts on the diagonal. (Don't be too picky or you'll be there all day. Am I right, or am I right Michelle?) When you get all the way around your wreath, cut the yarn and glue the end to the back of your wreath with hot glue.

5. Repeat step 4, but cross of the felt hearts along the other diagonal, forming a "X" over each heart. (You can manipulate the yarn "X's" just by slightly moving the pieces of yarn once the wrapping/gluing is complete.)

6. Hang on your door, place on a mantle, or hang from a wreath post for all to admire. (I used a piece of ribbon to hang it from my front door.)

Not only am I happy how the wreath turned out, but I had so much fun crafting with Michelle while our kids played (again).

Hellooo everyone and happy Food-a-licious Friday! I am Michelle and I am visiting from my brand new blog, ModernMarthaMichelle. My sweet little blog is all about sharing mommy stories, crafting, exercise tips, nutrition tips, and delicious recipes such as the one I am sharing with you today.
Kara is a childhood friend of mine. She and I recently reconnected with thanks to Facebook, and our awesome hobbies (blogging, crafting, & being moms) that we share in common. Kara is my {blogspiration}, so I am so excited and honored to be guest hosting on her fabulous blog today!

Tonight we are cookin' up a meal that is a favorite in my home. Now, I ain't no spring chicken, but that's what we're makin'. Ok, so it is really called a "young" chicken. We're cooking a whole chicken in the crock pot. This dinner is great because it is so versatile. You set your crock pot depending on how much time you have~ you can turn it on before you leave for work or in the middle of the day. I hope y'all love this healthy, comfort- food recipe I am sharing.

What ya need:

Whole 3- 4lb chicken (serves 4)
Yellow onion
Lawry's Seasoning Salt
Salt and pepper

What ya need to do:

Fill your sink with warm water and add a dash of salt. Soak the chicken in the salt water for 20 minutes.

Pluck all hairs (soon to be feathers) and any "funk" on the outside from the chicken.
Here comes the nitty gritty~ Via the back end, go wrist deep inside the chicken and pull out all the "extras".

You'll know what I mean as soon as you're in there. Discard extras. Drain your water.
Pour some salt on your fingertips and rub on the outside of the chicken. Then, pour more salt on your fingertips and rub all around on the inside of the chicken. This helps rid any foul taste.

So, our little chicken is featherless, the innards are out-ard, and I think we are ready to move along to the easy part.

Put the chicken inside the crock pot.
Quarter your onion and put 1/4 under each "armpit" and the 2 other quarters inside the chicken.

Liberally sprinkle the chicken with the Lawry's Seasoning Salt, then the pepper and add a little salt.

Set your crock pot on the high setting and cook for 4- 5 hours, or the low setting for 8+ hours.

This is what your little chickie will look like when all is said and done:

The meat seriously falls off the bone when you are trying to get it out of the crock pot, y'all! We just cut however much chicken we each want off from in the crock pot and put it on our plates. You can put the whole thing on a serving dish if you want to be fancy. Be prepared to devour the moist-est and most tender chicken EVER! It is so delicious. Best part is that it tastes like a total cheat meal/comfort food meal, but it is so healthy.

We make this into a meal by adding a sweet potato and a spinach salad, or some other kind of green veggie. Again, good and good for you.

Ok, just when you think it doesn't get any better, there's more! If you take all the left over chicken off the bones and refrigerate it, you have chicken for homemade chicken noodle soup. Food-a-licious Friday {63} Twice Baked Meaty Potatoes

Well hello there and Happy Friday to you!

I am excited to share this pinspired recipe with you today. Here is the PIN and here is the original RECIPE if you'd like to check those out.

One of the reasons (and there are many) that I love Pinterest is for all of the amazing recipes I find. Some I make following the directions exactly, but for the most part I tweak them and make them into something I know my family will enjoy.

Let's get started, shall we?

{Ingredients}

3-4 large potatoes

2 green onions (chopped)

1/2 of a red bell pepper (chopped)

1/2 can of corn (drained)

12 oz of ground turkey meat

splash of milk

knob of butter

2-ish cups of shredded cheese

salt

pepper

garlic powder

{Instructions}

1. Clean your potatoes and use a fork to poke them. Rub them down with olive oil and sprinkle them generously with salt. Put them in a (preheated) 400 degree oven and bake for about an hour (depending on how big your potatoes are).

2. Cook up your ground turkey meat on the stove, seasoning with salt, pepper, and garlic power (to taste). Once your meat is almost cooked, add in the green onions, bell pepper, and corn. Finish cooking and remove from heat.

3. Once your potatoes are finished, cut them in half and scoop the insides out and into a mixing bowl. Be sure to leave about 1/2 inch of potato in there otherwise they will fall apart. Don't burn your hands! Use a towel to hold onto the potato.

4. Add butter, salt, pepper, garlic, 1 1/2 cups of shredded cheese, and a splash of milk to your mixing bowl of potatoes and mash/mix together well.

5. Scoop the meat mixture into the bottom of the potato "shells" and then top with a mound of the mashed potato mixture.

6. Sprinkle the rest of the shredded cheese on top of the potatoes and place back into the oven for 15-20 min. (or until cheese is melted and browned a bit).

7. Remove from the oven and let cool for 5-10 min.

8. Garnish with a sprinkle of green onions and serve!

These were SO YUMMY!! And we had leftovers for lunch, which makes this an even BETTER dinner : )

Two years ago I finally decided to click the publish button and I am SO glad I did.

Why am I so glad, you ask?

I have learned so much more about myself just from blogging. I have become a more creative woman. I have become a more hands-on, do-it-yourself wife. I have become a better cook and home-maker. I have found, shared, and been inspired to create teachable moments with my daughter. I have shared my creativity with others and they have shared their talents with me. I have made so many special friendships. Yes, REAL friendships with REAL women. Behind a great blog is a great woman, just remember that ;)

Big Kid Hooded Towel

My almost 4 year old has grown out of all of her hooded towels. And hooded towels are just the best, don't you think?

(Is it weird that things like that make me a little bit sad? My baby is not so baby-sized anymore.)

My big girl requested a bigger towel and my friend's daughter's first birthday was coming up, so I decided to make 2 hooded towels using this tutorial.

All you need is one large towel, one hand towel, ribbon, scissors, coordinating thread and your sewing machine. (I purchased my towels at Walmart for under $8 total.)

The tutorial is super easy to follow with great photos of each step.

For my friend's daughter, I added some bath books and bubble bath and it made a great bathtime themed gift.

I think it turned out super cute and Luci loves it. I don't see her growing out of this hooded towel any time soon : )
